Whenever friends and family are invited to dine with us, the most requested dishes , by fare, are the twelve presented here on these pages. Try them yourself and see which you would rate as number one. But please use caution. Any one of the twelve could become your addiction

Custard Bread Pudding

My personal number one dessert would have to be my home made Custard Bread Pudding. The key word here is custard. There are those folks who are not big bread pudding fans. Let me suggest to you that custard bread pudding is a new experience as compared to regular bread pudding. You owe it to your taste buds to give it a try
.
Ingredients

18 Eggs
2 Quarts Whole Milk
5 Teaspoons Vanilla
1/2 Teaspoon Salt
3 Cups of Sugar
1 Cup Raisins
1 and 1/2 Loaves of Italian Bread

Directions
Place all eggs in a very large mixing bowl and beat well
Add milk and vanilla and salt and beat again
Cut off ends of bread. NOT USED
Slice bread into 1 1/2 inch slices
Cover the bottom of a glass baking dish with the bread slices
Place the bread slices close together. No spaces
Add the sugar to the mix and beat again
Pour the mix over the bread to cover
It is easier to use a cup to scoop the mix from the bowl to pour over the bread
You must stir the mix as you pour it over the bread or
some of the sugar will remain on the bottom of the bowl
Let the bread soak in the mix for 30 minutes
Sprinkle the raisins evenly over the bread and press into the bread
Place the baking dish in a larger pan with one inch of water
Bake at 350 degrees for one hour. Until firm but not dry.
This will make one 8 x 16 inch baking dish or two 8 x 8 dishes


Magic_Kitchen_Potato_Casserole

This dish is truly a Magic Potato Casserole. The magic is the fact that you do not have to cook, peel or mash any potatoes. Still you will receive rave reviews from your dinner guests for this potato dish.

Ingredients

3 cups of milk
2 cups of instant mashed potato flakes
1/2 pound of butter. (2 sticks)
3 large onions
1 teaspoon of salt
one cup of grating cheese
One package frozen chopped spinach. (optional)

Directions

cut and dice onions very fine
Saute onions in butter till onions are translucent not brown
In a large bowl, mix milk, potato flakes, salt, grating cheese and chopped spinach.
When spinach is thawed, squeeze out water before using. Spinach is optional.
when well mixed add onions and butter and mix again.
put mix into a glass backing dish and sprinkle top with grating cheese
Bake at 350 degrees for 40 minutes


Russo_Macaroni_and_Cheese

When you hear the words “Macaroni and Cheese” you think of a ready to eat meal straight out of the box for the kids lunch. Well this creation is a dish for the adults. The flavor of this Macaroni and Cheese will satisfy the most experienced critic.

Ingredients

one pound of macaroni
One stick of butter
half cup whole milk
One and a half cups of sharp cheddar cheese
One and a half cups of Mozzarella Cheese.
1/4 cup of Italian bread crumbs.
one tablespoon of garlic powder

Directions.

Cook pasta in salted water, Al denti.
cut butter stick into 1/4 inch patties.
Place 6 butter patties on bottom of glass baking dish
Alternate layers of pasta, cheese, butter, and bread crumbs salt, pepper to fill the dish
Pour milk around the edge of the pan.
Sprinkle top with, garlic powder, salt, pepper, and balance of bread crumbs.
Sprinkle top with paprika for color
Bake at 350 degrees for 45 minutes
Serve hot with a glass of your favorite dry white wine


Peach_Banana_Pancakes

To start the day with a healthy satisfying breakfast there is nothing better than fresh sliced peaches on a stack of banana pancakes. This dish will require some preparation the night before. But this delectable breakfast. will be a favorite from now on

Ingredients

One mashed banana
6 large peaches
half cup of sugar
Hungry Jack pancake batter
One egg
One table spoon of vanilla

Directions

Preparer the peaches the night before
Wash peaches, cut in half and remove pit
slice peaches in a bowl and cover with half cup of sugar
Place in refrigerator over night

mix mashed banana and vanilla with pancake batter
Make pancakes and serve
Use fresh sliced peaches to top your pancakes


Family_Meat_Loaf

This family favorite is a one dish meal that can be served right from the center of your table. This way it will be within reach when you go back for seconds. Or more?

Ingredients

Three pounds chopped meat
Use one pound each of beef, pork, and veal
one 14 ounce can French style string beans, chopped.
One 14 ounce can of carrots, chopped.
2 large onions, chopped
2 eggs, well beaten
4 slices of bread soaked in water and squeezed out.
half cup of Italian bread crumbs
Mix very well all the above ingredients in a large bowl

Directions

Form the meat loaf in a baking pan leaving a space of one and a half inches between the edge of the pan and the meatloaf. Wash eight or ten new potatoes (red skin) and quarter them. place the potatoes in the pan around the meatloaf.
Bake at 350 degrees for one hour and 15 minutes.
Then slide pan out of the oven and add one 14 ounce can of peas over potatoes
Bake for another 15 or 20 minutes to cook peas
This meal can be served right from the center of the table.


Light_and_Fluffy_Chocolate_Mousse

Some chocolate mousse dishes I have tasted in the past were more like a pudding than a mousse. This Mousse is light and fluffy with a chocolate flavor that will please the most ardent chocolate fan.

Ingredients

6 semi-sweet one ounce squares of chocolate
1 unsweetened one ounce square of chocolate
one half cup of fresh brewed coffee
4 egg yokes
1 cup of sugar
one quart of heavy whipping cream
2 tablespoons of vanilla

Directions

Melt chocolate in a double boiler.
Mix one half cup of coffee to chocolate
Beat 4 egg yokes very well with one cup of sugar.
Mix in chocolate and coffee and beat well. Set aside.
In a very large mixing bowl, beat one quart of cream with vanilla and add one half cup of sugar. beat till very stiff and remove one quarter of whipped cream and set aside for topping
To the three quarters of the whipped cream in the large bowl you add the chocolate mix and fold in gently but thoroughly
Place the chocolate mousse in a large clear glass serving bowl and top with balance of whipped cream.
Sprinkle the top with grated chocolate and serve


Chicken_Salad_Delight

The chunks of chicken in this salad along with other zesty ingredients let you know at the first taste that you are in for a full flavored treat. This is not your chicken salad paste. The secrete ingredient here would be the chunks

Ingredients

Six chicken breasts, Boneless and skinless.
Marinate in light Caesar dressing over night or longer.
Bake at 350 degrees for half hour.
Drain liquid off and chop into chunks
Half pound of chopped baby carrots and chopped celery
One and a half cups of chopped walnuts
Half cup of raisins.
Half cup of diced apple.

Directions

Chop all of the above to bite size or small chunks and mix with light Hellmann’s mayo to taste


Double_Banana_Nut_Loaf

Friends and family always enjoy exchanges at the holidays but none receive more positive responses than the rich moist flavor of my Double banana nut loaf. This is a real treat from one friend to another. Special Note When you have over ripe bananas, peel, bag, and freeze. Then when you have enough bananas (24)you can bake 6 loves at the same time.

Ingredients

Half cup of cooking oil
One cup of sugar
2 Eggs
One teaspoon salt
One teaspoon baking soda
one cup of flour
Four mashed bananas
One cup chopped walnuts nuts
One cup of raisons
One cup of chocolate chips
One table spoon vanilla

Directions

Place one half cup of flour in large mixing bowl
add raisons, nuts, and chips to coat.
Sift flour from this mix and set mix aside.
Add to large mixing bowl the oil, sugar, eggs, salt, soda, flour, and bananas and mix.
Then stir in mix of raisons, nuts, and chips.
put batter in 9 inch loaf pans. Fill half way. Bake at 325 Degrees for one hour.
or until firm. Can be frozen for later use.


North_of_the_Border_Chili

The robust flavor of the meat and beans in this chili sauce make this a real winner. Be sure to serve plenty of your favorite bread. You will want it to wipe your dish clean

Ingredients

One can stewed tomatoes (1 pound 12 ounces)
One can tomato soup (10 3/4 ounces) Do not dilute.
One can red kidney beans. (rinse off)
One can chick peas. (rinse off)
4 large onions
One and a half pounds of chopped meat.
Half cup olive oil.
One teaspoon salt.
One teaspoon pepper.
One table spoon garlic powder.

Directions

In a large pot add olive oil and chopped meat.
Break up meat in very small pieces and brown lightly.
Chop onions very well and add to pot.
Add soup, tomatoes , beans, chick peas, salt, pepper, and garlic.
let simmer for 15 minutes.
Add half cup of dried onion flakes and two tablespoons chili powder.
Let simmer for another 15 minutes. and serve.
If you want your chili thinner, add one cup of beef broth


Nut_Sour_Cream_Cake.

At first glance you might think this is just another vanilla cake. Not so. The rich texture of the cake and the surprise sweet and nutty flavor will remain long after the last bite is finished.

Ingredients for batter

Half pound butter
4 eggs
2 Teaspoons baking soda
3 teaspoons baking powder
1 table spoon vanilla.
3 cups of flour.
2 cups of sugar.
1 pint of sour cream

Ingredients for sugar mix

One cup sugar
one cup chopped walnuts.
2 teaspoons cinnamon

Directions

In a large mixing bowl beat 4 eggs
Add one pint of sour cream 3 cups flour, Mix
Add sugar, Baking soda and powder, and vanilla. Mix
Add half pound of melted butter. Mix
Set this batter aside

For sugar mix
In separate bowl mix
one cup chopped walnuts
one cup of sugar.
2 teaspoons cinnamon. set aside
Pour half of cake batter into a bundt pan and spread.
Pour half of sugar mix on top of batter in pan.
Use a fork to lightly swirl mix into batter.
Pour balance of batter on top of sugar mix in pan and spread.
Pour balance of sugar mix on top of batter in pan and lightly swirl as before.
Bake at 350 degrees for one and a half hours.
For a glaze use half cup powdered sugar and two tablespoons of water
Let cake cool before serving.


He_Man_Quiche_Lorraine

To the He Man. If you try this Quiche, we will help keep your He Man status. We will not tell anyone how very much you enjoyed the first piece of Quiche. And the second piece too. It will be our secrete.

Ingredients

4 eggs, beaten slightly
2 cups of cream.
3/4 teaspoon of salt
1/4 teaspoon sugar.
1/4 pound of Swiss Cheese.
1/4 pound of Sharp Cheddar Cheese.
1/2 cup of chopped onions.
1/4 teaspoon pepper
6 slices of bacon, crispy. or one half cup of chopped ham.

Directions.

Combine eggs, cream, salt, sugar, and pepper.
Fry bacon crispy. or use ham.
Bake pie shell for 5 minutes.
Layer bacon, or ham and grated cheese, and onion on the bottom of pie shell.
Pour in remaining egg mixture.
Bake at 425 degrees for one hour or until knife comes out clean.


Aunt_Rose_Blintzes

When we went to visit our Aunt and Uncle for the weekend we would look forward to another family table treat. Sunday morning we knew that Aunt Rose would have her sumptuous blintzes hot out of the pan and on the table. A Sunday morning delight for all.

Ingredients

3 eggs
2 cups of whole milk
1/2 stick of melted butter.
2 tablespoons of sugar.
one table spoon of vanilla.
one cup of flour.

Directions.

Combine all in a large mixing bowl and mix well for a smooth batter.
Place a teaspoon of butter in a warm skillet over medium heat.
Pour 2 ounces of batter into pan. Swirl pan for a thin layer of batter to cover the pan.
Cook for 1 minute and flip over. cook till brown.
Cook all crepes and let cool. Place on serving dish in center of table.

Filling

One pound of farmer cheese.
one egg, beaten.
one tablespoon sour cream.
two tablespoons of sugar.
1/2 cup of crushed pineapple, drained.
Mix all of above for filling.

Place crepe on dish and spoon filling on center. Fold crepe over filling an enjoy.
